Caramelised apple crumble porridge

Porridge is a such a stable as the weather changes – typically bland and understated. This warming bowl of creamy oats is not only delicious but a functional food for the gut and our immune system. It will have you jumping out of bed this winter!

Rolled oats are fiber rich and a wonderful prebiotic food which provide nutrients to feed gut bacteria and promote a healthy gut microbiome.
Cashew butter is rich in healthy monosaturated fats, protein, fiber as well as being rich in nutrients. The coconut milk and cashews give this dish its wonderful creamy texture.
Stewed apples are a wonderful seasonal food, rich in polyphenols which are antioxidant rich compounds which help to protect the gut barrier and reduce inflammation.
Raw honey is an exceptional food for immune health as the season changes. Raw means it has not been pasteurized, which is a process which removes the propolis in the honey, associated with exceptional immune enhancing properties.
Ceylon cinnamon is less spicy in taste, a great blood sugar regulator and packed full of antioxidants!

Serves 2

1 cup of gluten free steel cut oats
2 tbsp cashew butter
1 tbsp raw honey
2 Bramley apples, peeled and cubed
3-4 cups sugar free coconut milk
1tsp Ceylon cinnamon

To serve:
2 tbsp sugar free granola
2 tsp crushed pecans

Place the apple and cinnamon into a small pan, over a low-medium heat and allow to soften. Stir the mixture to prevent it burning and add a dash of milk if needed. Once cooked leave to stand off the heat.

In another pan, add the oats and coconut milk in a pan over a medium heat. It takes around 7 minutes to cook the oats, keep stirring so they don’t burn and add more milk if needed. Stir through the cashew butter and raw honey once the oats are soft and ready to serve.

Share the oats between two bowls and add half of the caramelised apple mixture to the centre of each bowl. Sprinkle over the granola and crushed pecans between each of the bowls.
